Soften the cream cheese. You want it truly soft—when you press it with a finger, it should give easily. This usually takes 30–60 minutes at room temp depending on your kitchen.
Beat the base until smooth. In a medium bowl, beat the softened cream cheese, brown sugar, vanilla, and (if using) a pinch of salt with a hand mixer for 1–2 minutes. Scrape the bowl once. You’re looking for a fluffy, smooth spread—no sugar crunch, no cream cheese bits.
Spread into a shallow dish. Use a small pie plate or shallow bowl (something wide, not deep). Smooth the cream cheese layer into an even thickness.
Add the caramel layer. Spoon the caramel sauce over the top and gently spread it to the edges. If your caramel is super thick, warm it for 5–10 seconds in the microwave so it spreads instead of tearing up the cream cheese.
Finish with toffee. Sprinkle the toffee bits over the caramel. Add the toffee right before serving if you want it crunchy (it softens if it sits for hours).
Slice apples and serve. Cut apples into wedges or thin slices. If they’ll sit out more than 20–30 minutes, toss them with a little lemon juice (or serve lemon wedges alongside so people can squeeze as they go).
