Instructions
Make the dough (or unwrap it): In a large bowl, whisk together the flour and salt. Cut in the cold butter until you’ve got a mix of pea-size pieces and some flatter shards. Drizzle in ice water a little at a time, tossing with a fork, until the dough holds together when you squeeze it.
Chill the dough: Split into 2 disks, wrap, and refrigerate for at least 30 minutes (don’t skip if your kitchen is warm).
Heat the oven and prep the dish: Set oven to 425°F (218°C). Put a rack in the lower third. Use a 9-inch (23-cm) pie dish.
Sweat the vegetables: In a large saucepan or deep skillet, melt the butter over medium heat. Add onion, celery, and carrots with a pinch of salt. Cook 8–10 minutes, stirring, until onion is soft and carrots begin to soften.
Build the roux: Add garlic and cook 30 seconds. Sprinkle in the flour and stir constantly for 1–2 minutes until it looks like a thick paste coating the vegetables.
Whisk in liquids and thicken: Slowly whisk in the broth until smooth, then whisk in the half-and-half. Add thyme and pepper. Bring to a gentle simmer and cook 3–5 minutes, stirring, until the sauce coats the back of a spoon (if still watery, simmer 2–3 minutes longer).
Finish the filling: Reduce heat to low. Stir in chicken, peas, and parsley (if using). Taste and adjust salt and pepper.
Roll the bottom crust: On a lightly floured surface, roll 1 disk into a 12-inch (30-cm) circle. Ease it into the pie dish, letting excess hang over.
Fill the pie: Spoon the chicken/vegetable mixture into the crust, then ladle the gravy in last and spread it around so the bottom crust isn’t flooded in one spot.
Top it and seal: Roll the second disk into a 12-inch (30-cm) circle. Lay it over the filling. Trim excess to about a 1-inch (2.5-cm) overhang, then tuck and crimp.
Vent + egg wash: Cut 4–6 slits in the top crust. Brush with egg wash.
Bake: Place the pie on a sheet pan. Bake at 425°F (218°C) for 15 minutes, then reduce oven to 375°F (191°C) and bake 25–35 minutes more, until deeply golden with thick bubbles coming through the vents.
Rest before slicing: Let sit 15–20 minutes before serving so the filling can set.
