Crispy chicken shawarma brings shawarma-shop flavor home—charred, spiced edges and juicy meat—using a yogurt-lemon marinade and either a hot skillet or a sheet pan (no rotisserie required).

Instructions
Mix the marinade: In a large bowl, whisk together the yogurt, olive oil, lemon juice, garlic, salt, pepper, cumin, coriander, paprika, turmeric, cinnamon, and cayenne (if using) until smooth.
Prep the chicken: Pat the chicken thighs dry with paper towels.
Coat thoroughly: Add the chicken thighs to the bowl and turn in the marinade until fully coated; massage gently so the spices reach all the folds.
Rest: Cover and refrigerate for at least 30 minutes and up to 24 hours.
Stovetop method (crispiest edges) — Preheat the pan: Heat a large heavy skillet over medium-high. When hot, add 1–2 tablespoons olive oil and swirl.
Initial sear: Lay marinated thighs in a single layer (cook in batches if needed). Cook 5–7 minutes without moving much until deep golden and charring in spots.
Flip and finish: Turn thighs and cook 4–6 minutes more, adjusting heat so the marinade doesn’t scorch, until the chicken reaches 74°C / 165°F internally.
Rest briefly: Transfer to a cutting board and rest 5 minutes.
Slice and crisp: Slice chicken thinly across the grain. Return slices to the skillet with any accumulated juices and cook 5–8 minutes, stirring every minute, until edges are deeply browned and crisp in spots (spoon off excess liquid if it’s steaming instead of sizzling).
Oven method (sheet-pan style) — Preheat the oven: Set a rack in the upper third and preheat to 220°C / 425°F.
Prepare the pan: Line a rimmed baking sheet with foil or parchment and lightly oil.
Arrange the chicken: Lay marinated thighs in a single layer (optionally cut each thigh into 2–3 large pieces for more surface area).
Roast: Bake 18–22 minutes until cooked through and browning at the edges.
Broil to finish: Broil 3–6 minutes on the top rack until golden with slightly charred spots (watch closely).
Rest and slice: Rest 5 minutes, slice into thin strips, and toss back in the pan juices.
Warm the pita: Warm wrapped in foil in the oven 5–7 minutes, or toast briefly in a dry skillet until pliable.
Set up toppings: Arrange cucumbers, tomatoes, onions, pickles, herbs, and sauces for serving.
Assemble wraps: Spread sauce on warm pita, add sliced chicken and toppings, and roll tightly, tucking in the sides.
Assemble bowls: Add rice or salad greens to a bowl, top with chicken, vegetables, herbs, and sauce.
Optional re-crisp: Toast stuffed wrap seam-side down in a lightly oiled skillet over medium heat for 1–2 minutes per side.
