One pot creamy tomato tortellini soup is a weeknight-friendly dinner: a velvety tomato base simmered with herbs, finished with tortellini, spinach, and Parmesan for a hearty, kid-approved bowl.

Instructions
Start the base. Set a Dutch oven or soup pot over medium heat and add the olive oil. Once it shimmers, add the onion and a pinch of the salt. Cook 4–5 minutes, stirring now and then, until softened and translucent.
Bloom the aromatics. Add garlic, dried basil, dried oregano, and red pepper flakes (if using). Stir constantly for about 1 minute—fragrant, not browned.
Tomatoes + broth, then simmer. Pour in crushed tomatoes and broth. Bring to a gentle boil, then lower to a steady simmer. Simmer 10 minutes, uncovered.
Cook the tortellini in the soup. Keep the soup at a gentle simmer and stir in the tortellini. Cook until tender, 7–10 minutes (check the package; brands vary). Note: tortellini absorbs liquid—if planning leftovers, consider cooking tortellini separately or loosen later with extra broth.
Turn down the heat before dairy. Drop the heat to low and stir in the heavy cream (adding cream to a hard boil can cause splitting).
Finish with spinach + Parmesan. Add the spinach and stir until it wilts, 1–2 minutes. Stir in the Parmesan until it melts. Taste and adjust salt and pepper.
Serve immediately. Ladle into bowls and top with extra Parmesan and basil if desired. Serve with bread or grilled cheese.
